Sharp but very thin blade and too lightweight
I'm a professional chef. I picked this up at my local kitchen supply store because I had never seen Japanese steel so cheap, and I have been blown away. Ive had it for over a year now and its the best santoku Ive ever used. Its incredibly comfortable, lightweight, and sharp. It sharpens easily and retains its edge well. I use it almost an hour every day for mushroom, tomato, lettuce, and other light weight veggies. I cant recommend this enough.
I was surprised at how well this knife is designed and how easy it is to chop, slice and cut up pretty much anything.
I use it daily to make my lunch salad.
Makes it easy.
I LOVE this knife for 3 reasons. The price/value, how functional it is cutting every kind of produce including tough butternut squash, and comes with a shield.
Thanks by far this is the best knife on the market. The sharpness is definitely second to none. I highly recommend buying this magnificent knife as soon as possible its worth the money.
